Sweet Chilli Sausages

An easy way to turn sausages into something special. The speedy sauce with a mild kick and jammy onions will win over the whole family.

Ingredients

  • 12 thick pork sausages

  • 2 onions, peeled and sliced

  • 4 tablespoons sweet serendipity sauce

  • 2 tablespoons honey

  • 1 tablespoon tomato paste

  • 2 garlic cloves, minced

  • 1/2 teaspoon dried oregano or 2 tsp fresh

Instructions

  1. Heat your oven to 220c/ 200c fan

  2. Place the sliced onions at the bottom of a roasting dish and drizzle them with a little olive oil.

  3. Lay the sausages in a single layer on top of the onions and bake them for 15 minutes.

  4. While the sausages are baking, combine all the other ingredients in a bowl, adding some salt and pepper to taste, along with 3 tbsp of water.

  5. After the initial 15 minutes, pour the sauce mixture over the sausages and mix it in well. Bake for an additional 25 minutes, turning the sausages once or twice to ensure they're coated with the sauce.

  6. Remove the dish from the oven when the sausages are golden and the sauce has thickened.

Hints & Tips

Sausages - You can use beef sausages if you don't have pork sausages on hand.

Reduce the heat - If you prefer you sausages with less of a kick use 2.5 tbsp of sweet serendipity sauce and 2.5 tbsp of tomato paste instead of the above mix.

Serving suggestion - You can serve these sausages in various ways - as a tasty sausage and bread dinner, create delicious hotdogs with all the toppings, or enjoy them with chips, mashed potatoes, or baked potatoes.

Portion size - This recipe serves 4-6, depending on your serving style. Leftovers make great lunches.

If you want a smaller portion, you can halve the recipe.

Storage - Store any leftovers in the fridge for up to 3 days. These sausages are also suitable for freezing.
