Steak Sandwich with a Zingy Mayo Dressing

and Quick Balsamic Pickled Red Onions

Ingredients

  • 400g steak - see hints & tips

  • Olive oil

  • 4 crusty bread rolls

  • 60g rocket

  • 1 serving of balsamic pickled onions - see hints & tips

  • fresh thyme

  • Salt & fresh black pepper

For the Mustard Mayo

  • 6 tablespoon mayo

  • 1 tablespoon lemon myrtle mustard

  • 2 tablespoon finely grated parmesan

  • Pinch of cayenne pepper (optional)

Instructions

1. Prepare the Mustard Mayo: In a small bowl, combine 6 tablespoons of mayo, 1 tablespoon of lemon myrtle mustard, and 2 tablespoons of finely grated parmesan & season. If you like a little heat, add a pinch of cayenne pepper to the mixture. Mix everything well. Set aside.

2. Preheat the BBQ: Preheat your BBQ to high heat. Make sure it's clean and well-oiled to prevent sticking.

3. Season the Steak: drizzle the steak with olive oil & season generously with salt and pepper on both sides.

4. Cook the Steak: Place the seasoned steak on the hot grill. For medium-rare, grill for approximately 3-4 minutes per side, depending on the thickness of the steak. Use tongs to flip the steak only once. Avoid pressing down on it, as this can release the juices and make the steak less juicy.

Tip - Cooking times can vary, so use a meat thermometer to check the internal temperature. For medium-rare, aim for an internal temperature of about 55-57c. Once the steak reaches the desired doneness, remove it from the grill and let it rest for a few minutes on a cutting board. This allows the juices to redistribute.

5. Slice the Steak: After resting, slice the steak thinly against the grain. This will make it more tender and easier to bite into. Season again and sprinkle with 1 tsp of fresh thyme leaves (if using dried thyme leaves use 1/2 tsp).

6. Assemble the Sandwiches: Cut the crusty bread rolls in half. Spread a generous amount of the Lemon Myrtle Mustard Mayo on the bottom half of each roll. Place a handful of rocket on top of the mayo. Add a few slices of the grilled steak. Top the steak with balsamic pickled onions. Place the top half of the roll over the fillings to create a sandwich.

7. Serve and Enjoy: a. Serve your delicious Steak Sandwiches with Lemon Myrtle Mustard Mayo immediately. You can also serve them with your favorite side dishes, such as fries or coleslaw.

Hints & tips

Quick balsamic pickled onions

Ingredients

  • 1 medium red onion, very thinly sliced

  • ½ cup water

  • ¼ cup white vinegar

  • ¼ cup balsamic vinegar

  • 1 ½ tablespoons brown sugar

  • 1 ½ teaspoons fine sea salt

Instructions

  1. Place sliced onions into a bowl or glass jar.

  2. In a small saucepan, combine the water, both vinegars, sugar, salt. Bring the mixture to a gentle simmer over medium heat, then carefully pour the mixture into the bowl/jar over the onions.

  3. Use a butter knife or spoon to press the onions down into the vinegar. Let the pickled onions cool to room temperature (about 20 to 30 minutes), at which point they should be sufficiently pickled for serving.

  4. Cover and refrigerate leftover pickled onions for later. Quick-pickled onions are best consumed within three days, but they keep for 2 to 3 weeks in the refrigerator.

Make it gluten free - To make this recipe suitable for a gluten free diet use your favourite GF bread rolls

Steak - In this recipe, sirloin steak is the recommended choice, but feel free to exchange it for your preferred steak, such as rump or fillet.

Easy swaps - Swap the rocket for your preferred lettuce and add in any other salad veg you like.

Serving suggestions - Serve right away, while it's still warm with your favourite side dish such a s fries or sweet potato chips.

Portion size - Serves 4 or 2 with enough for lunch or dinner the next day.

Storage - Store leftover steak in the fridge for 2 days, leftover mayo can be stored in an airtight container in the fridge for a week. Not suitable for freezing.
