Quick and Easy Breakfast Tart

Think of this puff pastry breakfast tart as your traditional breakfast, but with an fancy twist. Crispy puff pastry, a creamy, cheesy filling, and the addition of bacon, tomato, and mushrooms create a breakfast that's perfect for a casual Sunday morning and sure to please!

Ingredients

  • 1 sheet of frozen puff pastry

  • sesame seeds

  • 1 egg

  • 2.5 tbsp cream cheese

  • 1 tsp Rafiki seasoning

  • 5 cherry tomatoes, sliced

  • 2 mushrooms, sliced

  • 2 rashers of bacon, chopped

  • S&P

  • Fresh spinach to serve

Instructions

  1. Preheat your oven to 200c /180c fan. Place the puff pastry on a baking tray lined with baking paper.

  2. Create a boarder by scoring a line 1 inch from the edge of the pastry all the way around. Use a fork to prick small holes all over the area inside this border.

  3. Beat a single egg, and then use a little of it to brush over the 1-inch boarder. Sprinkle sesame seeds all around the border. Bake for 10 minutes.

  4. In a medium-sized bowl, combine the remaining egg wash with the cream cheese and Rafiki seasoning.

  5. Spread the creamy filling mixture over the pastry, staying within the boarder.

  6. Roughly chop the bacon into chunks and scatter them around the filling, then add the sliced tomatoes and mushrooms. Season with salt, pepper, and a touch more Rafiki seasoning.

  7. Continue baking for another 10 minutes or until the pastry turns golden and crisp, and the egg mixture sets.

  8. After removing from the oven, sprinkle fresh spinach over the tart, slice it into 4 pieces, and serve immediately.

Make gluten free - Swap the pastry for your favourite gluten free pastry. Follow the same steps above.

Easy swaps - As an alternative to cream cheese, you can use ricotta, mascarpone, or goat cheese.

Add ins - Add in any other veggies you like such as spring onion, capsicum or extra protein like sliced cooked sausage or chorizo.

Serving suggestion - Serve with fresh spinach or rocket.
