Moroccan Cous Cous Salad
This salad ticks all the boxes, quick, easy, vibrant, fresh & healthy….. A great choice for family get togethers! It also stores really well, so leftovers for a mid-week speedy lunch.

Ingredients
With Love from Basque Cous Cous
Chickpeas - 1 can drained
Red Onion - diced small
Carrot - 1 large grated
Cucumber - 1 medium peeled + chopped
Cherry Tomato - 10 sliced in half
Mint - 1 cup of leaves
Toasted Almonds - 1 Handful
Cranberries - 1 Handful
Coriander - optional
Olive oil
1 large Lemon - zest & juice
Method
Prepare Cous Cous as per packet instructions and add prepped ingredients.
Toss salad together & top with almonds, cranberries, chopped coriander & generously drizzle with olive oil, zest + juice of your lemon.
Hints & Tips
This recipe can easily be halved for smaller get togethers - half the packet of Cous Cous and store the remainder in a airtight container for another time.
If you are looking for an added creamy tang, crumble 150g of plain goats cheese on top of your salad.
