5 Hour Preserved Lemon & Harissa Lamb
A leg of lamb slow cooked until the meat is fall apart tender! Roasting this lamb low & slow is an easy, stress free way of perfecting your roasting skills! No Carving required.

Ingredients
2-3 kg Leg of Lamb
1 whole Garlic Bulb + 1 Clove
Salt & Pepper
170g tub of natural yoghurt
Method
Marinate lamb the night before with your jar of Josh & Sue preserved lemon harissa making sure you save 1/4 of the jar for later.
The next day
Preheat oven 160c fan / 180c / 350f / 4gas
Prepare garlic bulb cutting it in half width ways & place in oven dish. Sit Lamb on top & season. Cover with foil and roast for 4.5hours. Remove foil for the last 1/2 to brown, basting with juices every 10 mins.
Serve lamb with the delicious juices drizzled over the top & mix the 1/4 jar of harissa and finely chopped garlic clove with natural yoghurt.
Hints & Tips
To check if the meat is tender it should offer no resistance to your knife. If not, return, covered, to the oven & check again after 45 mins.
