Japanese Miso Sausage Tray Bake

A Japanese inspired tray bake of oven roasted sausages, apple & veg are perfectly caramelised, and finished with a sweet & savoury sesame sauce adding a rich nutty flavour. Roasting first with just olive oil & 5 spice gives everything the chance to blister & colour up without over cooking your sauce (causing it to dry out).

Ingredients

  • 1kg Pork Sausages

  • 2 Medium Potatoes

  • 2 Medium Sweet Potatoes

  • 2 Carrots

  • 2 Zucchini

  • 2 Apples

  • Jar of Kaokaomiso

  • 1.5 Tsp 5 Spice

  • Olive oil

  • Sesame seeds

  • Chilli flakes - optional

Method

  1. Preheat oven to 200°C/ 180°C fan/ Gas 6

  2. Peel and cut potatoes into 1-inch pieces. Trim and peel carrots. Cut them in half lengthways and then into 1-inch pieces. Peel and cut the sweet potatoes into 1-inch rounds. Peel onions. Halve them and cut each half into quarters. Quarter apples and remove core.

  3. Spread all veggies, apple & sausages over 2 lined baking trays. Drizzle with olive oil and season with 5 Spice, salt and pepper.

  4. Roast in the oven for 30 minutes.

  5. Prepare the dressing by mixing half a jar of your miso paste with 2tbsp water to make it easier to drizzle.

  6. Remove the trays from the oven. Drizzle the dressing over the top of everything (reserving a little for serving) and pop back in the oven to roast for a further 10-15 minutes until the veggies are tender, the sausages are browned and everything is crisp around the edges.

  7. To serve sprinkle with sesame seeds & remaining sauce (Chilli flakes if using)

Hints & Tips

Alternatives to 5 Spice:

Star Anise - using 3-4 crushed into small pieces and sprinkle over your prepared trays.

Fennel seeds - a little less traditional but pair well with the sausages & apple. Use a smaller amount of 1Tsp.
