Huevos Rancheros Nachos
Huevos Rancheros Nachos a quick and easy recipe that can be eaten for breakfast, lunch or dinner! Crispy chips, topped with taco spiced chorizo, black beans and fresh tomato baked and sat under runny eggs, creamy avocado, oozy cheese and cool sour cream…is your mouth watering yet? Ingredients
400g Corn chips of choice - We use Sonora salted chips
2 Chorizo sausages
1 Can Black beans, drained and rinsed
1 Cup cherry tomato, halved
2 Tbsp Fancy Hanks taco seasoning + extra for seasoning
1 Cup of grated cheese
80g Crumbled goats cheese - Feta cheese would also work
3 Spring onion, sliced
1 Avocado, sliced
Jalapeno slices, fresh or pickled - As many as your prefer
4 eggs
4 Heaped tbsp of sour cream
Method
Preheat oven to 200c/ 180c fan. Line a large baking tray with foil or baking paper.
In a bowl add black beans, chorizo, tomato & Fancy Hanks taco seasoning. Mix well.
Spread corn chips on the baking sheet in a even layer. Top with the chorizo mix and sprinkle with the cheeses.
Add spring onions and desired amount of jalapenos before cracking and arranging the eggs around the tray.
Bake for 17-22mins until eggs are cooked but yolks are still runny.
Once cooked top with avocado, sour cream and season well with more Fancy Hanks taco seasoning. Enjoy!
