Yoghurt Curry Chicken Drumsticks

These yogurt curry marinated chicken drumsticks are super simple to make. They are a fantastic recipe to make when you’re entertaining, because they are effortless. You can prep them completely ahead, and then just pop them into the oven. They bake right in their marinade, and they come out tender, moist and super flavourful!

Ingredients

  • 1.5kg 8-10 chicken drumsticks

  • 1/2 cup plain Greek yogurt

  • 2 tbsp honey

  • 2 tbsp lime juice

  • 2 tbsp Burton's curry paste

  • 1 tbsp ginger, minced

  • 1 tsp salt

  • Fresh coriander to garnish

Instructions

  1. Whisk together the yoghurt, honey, lime juice, curry paste, ginger & salt.

  2. Place chicken drumsticks in a large bowl. Add marinade & mix to coat all over.

  3. Cover and refrigerate for 4 hours or up to 1 day for maximum flavour.

  4. Preheat oven to 220c/ 200c fan. Place the drumsticks in a lined baking dish and place in the oven.

  5. Roast for 35-40 mins. Serve hot with the mango chutney sweet potato mash, raita & chopped coriander.

Hints & tips

Chicken - Using drumsticks in this recipe is great as they cook quickly, the skin gets a little crispy & the meat stays nice and juicy. Feel free to swap for other chicken pieces such as skin on thighs. Remember not to over crowd the baking dish when cooking them - over crowding prevents the skin from crisping up.

Lime - No limes on hand. Lemon juice is a good alternative.

Serving suggestion - Serve along side sweet potato mash with mango chutney & raita.

Portion size - This chicken recipe is perfect to double/ triple for large crowds such as BBQ's. Equally you can half the recipe easily.

Storage - These drumsticks will keep in the fridge for 3 days. Delicious for smoko or lunches.
