Whipped Brie with Balsamic Strawberries

Indulge in a scrumptious Whipped Brie with Balsamic Strawberries. Blend Brie until creamy, spread it on a plate, top with sweet baked balsamic strawberries with basil & orange, and enjoy with crispy bread—simple and delicious!

Ingredients

  • 2 wheels of Brie (400g)

  • 250g strawberries

  • 2 tbsp Cranberry & Orange Balsamic

  • 2 tsp honey

  • 1 large baguette, sliced

  • Olive oil

  • Salt

  • 1 tsp orange zest, to serve

  • Fresh basil, to serve

Instructions

  1. Preheat the oven to 180c fan.

  2. Chop the strawberries and mix them with balsamic vinegar and honey. Spread the mixture on a lined baking tray and bake for 25-30 minutes. Let them cool to room temperature.

  3. Slice the bread, drizzle it with olive oil, and bake it in the oven for 5-7 minutes until crispy. Season the bread with salt.

  4. Peel the Brie using a potato peeler, do this with the cheese straight from the fridge. Then bring it to room temperature, chop it, and blend it in a food processor until it reaches a creamy texture.

  5. Spread the whipped Brie over a serving plate and top it with the cooled balsamic strawberries, torn basil leaves and orange zest.

  6. Add the crispy bread to the serving plate, and you're ready to dip and enjoy!

Hints & tips

Make gluten free - Make this suitable for a gluten free diet by replacing the crusty bread with toasted gluten free bread or your favourite gluten free crackers.

Brie tips

  • No need for fancy brie; choose a basic one. We're ditching the rind and amping up the flavour with the balsamic topping.

  • Peel cold brie for easier removal of the rind without losing too much cheese.

  • Let the brie reach room temperature before blending, just like you would with butter in a cake recipe, for smooth and easy whipping.

  • Blend the brie patiently; it will start off stiff, but after about 4 minutes in the mixer, it will become light and pillowy.

  • Camembert would be a good alternative if brie isn’t available.

Serving suggestion - Serve this delicious platter at a festive gathering or as a starter. Pairs perfectly with a cold glass of bubbles!

Portion size - This serves 8 people comfortably. The recipe will half for a smaller portion.

Storage - Keep any leftover whipped brie in a sealed container in the fridge for up to 5 days. Before reserving, let it sit at room temperature for 10 minutes, then give it a good mix with a rubber spatula. Not suitable for freezing.
