Citrus Maple Glazed Salmon

Ingredients

  • 4 salmon fillets or a 500g salmon piece

  • ½ tsp salt

  • 3 tbsp ham glaze

  • 2 tbsp maple syrup

  • 1 tbsp Dijon mustard

  • 1 tsp paprika

  • 1 tsp ginger powder or paste

  • ½ cup chopped pecans

  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 200/180c fan.

  2. In a bowl, mix together ham glaze, maple syrup, Dijon mustard, paprika, and ginger powder until well combined. Add salmon and leave to marinade for 10 mins.

  3. Place the salmon fillets on a baking tray lined with baking paper. Sprinkle salt evenly over the fillets.

  4. Sprinkle the chopped pecans over the glazed salmon fillets, pressing them slightly into the glaze to stick.

  5. Place the tray in the preheated oven and bake for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.

  6. Remove the salmon from the oven and garnish with fresh parsley for a burst of colour and added freshness.

  7. Plate the citrus maple glazed salmon fillets and drizzle any remaining glaze from the baking tray over the top. Enjoy!

Hints & tips

Salmon - Choose either salmon fillets or a whole piece—skin on or off won't impact the recipe. Choose fresh, vibrant salmon for the best taste and texture.

Make-Ahead - The citrus-maple mixture can be prepared up to 12 hours ahead. You can even let the salmon fillets marinate in the mixture for that time. Wait until the last minute to add the pecans.

Easy swaps - Walnuts are the best substitute for pecans due to their similar taste, texture, and appearance. Other nuts that can be used are chopped Brazil nuts or macadamias.

Serving suggestion - Serve on a bed or rice with a side of crunchy vegetables or a light salad to complement the rich flavours of the glazed salmon.

Portion size - Serves 4 or 2 with leftovers.

Storage - Store leftovers in an airtight container in the fridge for 3 days. Not suitable for freezing.
