Sumac & White Bean Salad

This easy popular Turkish salad called piyaz, or more accurately fasulye piayzi, is made with simple ingredients including white beans, tomatoes, onions, parsley and garlic. This version uses a light vinaigrette with fresh lime juice and a good dash of sumac bringing this satisfying white bean salad together. Ready in 15 minutes or less. 

This Turkish salad will deepen in flavour as it sits in the fridge. It’s a great option to make ahead and keep refrigerated for a bit to allow the flavors to combine well.

Ingredients

  • 1 can of butter beans, drained & rinsed

  • 2 large tomato’s, chopped into chunks

  • 2 limes, zested and juiced

  • 1 red onion, thinly sliced

  • 1/3 cup extra virgin olive oil

  • 1 red chilli, finely chopped

  • 1/4 cup Italian parsley, roughly chopped

  • 1/4 cup coriander, roughly chopped

  • 1/4 cup mint, roughly chopped

  • 1tbsp + 1tsp sumac - Herbies

  • 1 gem lettuce, washed + leaves separated

  • sea salt and freshly ground black pepper, to taste

Instructions

In a bowl mix the lime juice, zest & 1 tsp of sumac with the sliced onion and allow to stand for 10 minutes. This can be done a head of time - up to 12 hours before.

In a larger bowl mix together beans, tomato, herbs, chilli and 1 tbsp sumac before adding the pickled onion including the lime juice.

Toss everything together & season.

On a serving dish place the lettuce leaves around in a circle before placing the sumac bean mix on top. Sprinkle with a extra chilli slices and herbs if desired.

Hints & tips

Variations - If you don't have butter beans, you can use different white beans like navy beans or cannellini beans. I used canned beans for a shortcut, but you can also cook dried beans from scratch.

Extras - This is a great side dish - serving suggestions below. However, you can add extras like fried halloumi or garlic toasts on the side.

Serving suggestion - We love this salad with baked crumbed lamb chops. Omit the gem lettuce and serve on toasted sourdough for a light lunch.

Pan fry halloumi and serve as part of a platter at your next long lunch or BBQ with family and friends.

Portion size - Serves 2-4 as a side dish

Storage - The flavours in this salad develop the longer it is left. Will store in the fridge for 3 days in an airtight container.
