Baked Crumbed Lamb Chops

Who doesn’t like a crumbed chop?! These healthier crumbed chops are low effort - no four, milk or egg needed. Instead brush each chop with warm apple & mint jelly and press into seasoned bread crumbs. That’s it. Then bake in the oven and let the lambs natural fat do all the work! The result is golden and crisp chops with a mildly sweet and just a little tart flavour. Delicious.

Ingredients

  • 8 Lamb chops/ cutlets

  • 1 cup breadcrumbs

  • S&P

  • 1/4 Apple & mint jelly - Seed

Instructions

  1. Preheat the oven to 200c/ 180c fan. Line a baking tray with baking paper and set aside.

  2. Warm the 1/4 cup of apple mint jelly for 15 seconds in the microwave. Brush each chop on both sides with the jelly.

  3. On a plate season the bread crumbs with salt & pepper before pressing each chop into the crumb mix. Coat both sides evenly.

  4. Place chops on a baking tray and bake in the oven for 15-20 minutes, carefully turning once halfway through the cooking process.

Hints and tips

Make it gluten free - Use gluten free bread crumbs - these are the brands I suggest Woolworths or Kook A Krumb

Bread crumbs - This recipe works best with finer bread crumbs rather than panko. They cover the chops more evenly and less likely to fall off.

Serving suggestion - Serve chops with this White Bean Sumac Salad & oven roasted wedges. Extra dollops of apple & mint jelly and a little natural yogurt are essential!

Portion size - Serves 2-4 people depending on side dishes served with them.

Storage - Store in the fridge for 3 days. Suitable for freezing both before and after cooked.
