Sticky Stir-fry Chicken Traybake

Flavoured with honey and Herbies Family friendly stir-fry blend, this one-pan chicken dish makes a cheap and easy midweek family meal.

Ingredients

  • 1.5kg Chicken pieces, skin on and bone in

  • 2 tbsp sesame oil

  • 4 tbsp light soy sauce

  • 3 tbsp clear honey

  • 2 tbsp Herbies family friendly stir-fry mix

  • 1 Large sweet potato, peeled and cut into small wedges

  • 6 Small potatoes, washed and cut into small wedges

  • Bunch spring onions, chopped

  • 50g cashew nuts

Greens of choice to serve - I use green beans & Broccolini

Method

  • Heat oven to 220C/ 200C fan/ gas 6. Arrange the chicken pieces & potato wedges across two large roasting tins. Mix together the sesame oil, soy sauce, honey & stir-fry mix and some seasoning. Pour over the chicken & potato and toss to coat –Roast, skin-side up, for 25 mins, basting at least once.

  • Stir through the cashew nuts and sprinkle the spring onions over the chicken. Return to the oven for 5 mins. Take out the oven and rest for 5 mins before serving with greens of choice.

Hints & tips

The chicken and potatoes can be prepared ahead of time - toss with marinade mixture and refrigerate until needed. Cooking time will need to be adjusted, an extra 5-8mins should do it.

Use Chicken drumsticks instead of chicken pieces.

This dinner also works well if you omit the potatoes & serve it with brown rice.
