Satay San Choy Bow

San Choy Bow literally translates to 'wrapped in lettuce'. This fast and fresh recipe is whipped up in less than 30 minutes giving you a fun healthy meal for all the family!

Ingredients

500g Pork mince

1 Jar Turban Chopstick Satay

2 Garlic cloves, crushed

2 Cups of rice of choice - I use brown

1 Whole iceberg lettuce, washed and leaves separated

1/2 Cucumber, diced small

2-3 Carrots, peels and sliced into batons

4 Spring onion, sliced

1 Cup chopped peanuts

Coriander

Fresh chilli, sliced - optional

Method

  1. Start by putting rice of choice on to boil.

  2. Heat a large frying pan with 1 tbsp of peanut oil. Fry pork mince with crushed garlic for 5 mins until starting to colour.

  3. Add satay sauce and combine. Fry until fragrant.

  4. Drain cooked rice and add to the mince mixture.

  5. In the meantime, wash and separate lettuce leaves into cups, dice cucumber, peel and slice carrots into batons, chop spring onion and peanuts.

Serve by spooning pork mixture into lettuce cups & sprinkle with carrot, cucumber, spring onion, peanuts, coriander and chilli if using.

Hints & tips

This recipe uses pork mince but you can use any mince to hand - beef or chicken.

Try swapping the rice for Vermicelli noodles.

I like to use the bigger cups from a iceberg lettuce so they can fold round the mince - less mess!! Gem or cos lettuce would also work though.
