Steak Frites
with Diane Sauce
A fancy-sounding name for this dish is "steak frites." It's basically a beef steak served with French-fries on the side. You can find it in restuarants, and it's often served with gravy, sauce, or aioli. In this case, its a home cooked recipe with French fries that are seasoned with chimichurri seasoning & the steak served with Diane sauce. Yum!

Ingredients
4x 200g steak of choice (Rump, porterhouse, scotch fillet)
1.5kg potatoes
olive oil
2 tbsp chimichurri seasoning
130ml (1/2 jar) Diane sauce
Salt & pepper
Instructions
Preheat oven to 200c/ 180c fan. Remove the steak from the fridge and let it come up to room temperature while you prep your French fries.
Wash potatoes leaving skin on (you can peel them if you prefer). Cut potatoes into matchstick size fries.
Let potatoes soak in cold water in the sink or in a bowl for at least 30 minutes ( you could prep your potato in the morning and leave them in the bowl of water in the fridge until you are ready to cook). Remove from water and dry very well.
Toss with oil and chimichurri seasoning. Spread evenly in a single layer on a lined baking tray. You might need two trays.
Bake in the oven turning once until the fries are golden, about 35 minutes.
While the fries are cooking prep your steak with a little oil and season with salt & pepper. Either cook your steak once your fires are nearly cooked (the last 5 mins) or cook the fries and turn your oven down to keep warm.
To cook the steak pre heat the BBQ to hot.
Cooking times: RARE - 2 mins each side, rest for 2 mins, MED-RARE - 2.5 mins each side, rest for 4 mins, MED - 3 mins each side, rest for 4 mins, MED-WELL - 3.5 mins each side, rest for 4 mins, WELL DONE - 5-6 mins each side, rest for 5 mins.
Once cooked, place steak on a plate loosely cover with foil to rest.
While your steak is resting warm your Diane sauce in the microwave.
Serve steak frites with the Diane sauce on the side or drizzled all over your steak.

Hints & tips
Fries - Homemade fries are delicious but there are great frozen chip options too. Make this dish fuss free and use a packet of your favourite frozen fries. Lightly spray with cooking oil, season with chimichurri and bake as per packet instructions.
Easy swaps - Beef steak is used in this recipe. Make this recipe more economical and swap the beef steak for pork steaks or even chicken breast.
Serving suggestion - Are you a steak chips and salad family or a steak chips and veg? Either way add your favourite side to complete this dish.
Portion size - Recipe serves 4. Half the recipe for a cosy dinner for two.
Storage - Any leftovers can be stored in the fridge for 2-3 days.
