Blueberry & Banana Bread
This yummy blueberry banana bread is great for breakfast, brunch, or a snack in the afternoon. Banana bread is a classic recipe, but when you add blueberries, it becomes even more delicious. Your friends and family will love this tasty treat!

Ingredients
3 over ripe banana, mashed + 1 banana sliced lengthways in half
1 packet of banana cinnamon baking mix
1 ¼ cup of your milk of choice
1/2 cup brown sugar
1 cup blueberries (fresh or frozen)
Instructions
Preheat oven to 180c fan and line a loaf tin.
Empty packet mix into a large bowl and add mashed bananas, milk and sugar, mix well.
Let batter stand for 5 minutes.
Fold in 2/3 of the blueberries.
Pour batter into the loaf tin, place the sliced banana on the top and sprinkle the rest of the blueberries over the top.
Bake for around 40-45 minutes or until a skewer comes out clean.
Store in an airtight container in the fridge for 4 days or freeze.
