Blueberry & Banana Bread

This yummy blueberry banana bread is great for breakfast, brunch, or a snack in the afternoon. Banana bread is a classic recipe, but when you add blueberries, it becomes even more delicious. Your friends and family will love this tasty treat!

Ingredients

  • 3 over ripe banana, mashed + 1 banana sliced lengthways in half

  • 1 packet of banana cinnamon baking mix

  • 1 ¼ cup of your milk of choice

  • 1/2 cup brown sugar

  • 1 cup blueberries (fresh or frozen)

Instructions

  1. Preheat oven to 180c fan and line a loaf tin.

  2. Empty packet mix into a large bowl and add mashed bananas, milk and sugar, mix well.

  3. Let batter stand for 5 minutes.

  4. Fold in 2/3 of the blueberries.

  5. Pour batter into the loaf tin, place the sliced banana on the top and sprinkle the rest of the blueberries over the top.

  6. Bake for around 40-45 minutes or until a skewer comes out clean.

  7. Store in an airtight container in the fridge for 4 days or freeze.
