Southern Mustard Melt-in-the-middle Cheese Burger
Create these inside out cheese burgers with tangy southern mustard for your family burger night. Its the perfect fakeaway dinner!! Wrap your beef mixture around a little wheel of smooth creamy Babybel cheese before cooking.

Ingredients
500g beef mince
1 red onion, diced finely
4 tbsp southern mustard sauce + extra - Grunds
1 tbsp tomato paste
1 tsp garlic powder
1 tsp Worcestershire sauce
1 egg
salt & pepper
4 Babybel cheese
1 large tomato
Lettuce
4 tbsp mayo
4 bread rolls
Instructions
In a bowl add mince, onion, mustard sauce, tomato paste, garlic powder, worcestershire sauce & egg. Season well with salt & pepper.
Mix together well & divide into 4 balls. Flatten a ball and place a babybel cheese in the centre and seal the beef mixture around it. Do the same for the other 3 to create 4 burgers.
Either cook in the oven in a preheated oven at 180c fan for 15mins or on the grill for the same amount of time. They should be cooked through and the cheese hot and melted.
While the burgers are cooking mix together the mayo with a tbsp or two of the mustard sauce.
Cut the bread rolls in half, smear a little of the mayo across the bottom & top of each roll. Slice the tomato into 4 thick slices & wash & prepare the lettuce.
Once the burgers are cooked place one on each roll, top with extra southern mustard mayo. Add the tomato slice & season well before placing the lettuce on top. Serve immediately.
Hints & tips
Gluten free option - To make this suitable for gluten free diets replace the worcestershire sauce with GF soy sauce when making the burgers. Use GF bread rolls instead.
Beef - Classic burger meat uses beef but you can shake this recipe up and use beef/pork mix or just straight pork as an alternative.
Cheese - Babybel are the perfect texture and shape for this recipe. However, you can use standard cheddar or even mini brie if you can find it in the shops.
Serving suggestion - Serve along side potato wedges seasoned with homemade chicken salt.
Portion size - Half or double this recipe for your family needs.
Storage - The burgers can be prepared and frozen before cooking. Cooked beef burgers will keep in the fridge for 3 days and reheat well in the microwave. You can also make up your burgers and wrap in foil in the fridge to grab as a easy lunch.
