Sausage Rolls

Sausage rolls, tomato sauce, and Gourmet Spice Blends Australian Bush Dukkah are a perfect combination that was just meant to be!

These Sausage rolls are a convenient quick smoko idea or pack lunch addition for the week.

Ingredients

  • 500g beef mince

  • 1 carrot, peeled & grated finely

  • 2 eggs

  • 1/2 cup breadcrumbs

  • 1 tsp tomato paste

  • 1.5 tsp honey

  • 1 tsp onion powder

  • 1 tsp dried thyme

  • 1/2 teaspoon oregano

  • 1 teaspoon salt

  • 2 sheets puff pastry

  • Gourmet Spice Blends Australian Bush Dukkah

Method

  1. Pre-heat your oven at 200c fan/ 220c, and take out your frozen puff pastry sheets to defrost on the bench.

  1. Grate the carrot finely & place in a bowl with the mince, 1 egg, breadcrumbs, herbs, tomato paste, honey, salt and mix with your hands. You can also combine with a food processor if you prefer.

  2. Your mixture should provide enough meat for 4 sausage rolls logs. Cut your puff pastry sheets in half, and evenly divide the mixture onto each, shaping the mince along the long side of the pastry sheet. Fold the pastry over the mince, cut each log into 4 and place on a lined baking sheet.

  3. Whisk the remaining egg and brush the top of the sausage rolls, generously sprinkle the Australian bush dukkah over the top.

  4. Bake in the oven for 20 mins or until golden brown on top.

  5. Place on a cooling rack and allow to cool.

Hints & tips

If you are not eating straight away, they can be stored in an airtight container for up to 3 days in the fridge.

Beef mince is used in this recipe but lamb or pork would work just as well.
