Sweet Potato Sloppy Joe’s
Flavour your sloppy Joe mince with a smoky seasoning and serve it over tender sweet potatoes instead of a bread roll. The sweet potatoes perfectly complement the tangy, flavourful filling. Top it off with sour cream and cheese for a fun and easy weeknight dinner.

Ingredients
500g beef mince
1 onion, diced
3 garlic cloves
1 green capsicum, diced
2 tbsp smokey cue seasoning
1 tbsp Worcestershire sauce
1 can diced tomatoes
1 tbsp brown sugar
1 tbsp tomato paste
1 tbsp beef stock powder
For Serving
4 medium sweet potatoes

Grated cheese
Instructions
1. Preheat your oven to 180c fan.
2. Wash the sweet potatoes. Place them on a lined baking tray in the oven and bake for 45-60 minutes or until they are tender.
3. Meanwhile, let's prepare the smokey cue mince on the hob.
4. In a large pan over medium heat, cook the beef mince until browned.
5. Add diced onion, garlic, and green capsicum to the pan. Cook until the vegetables are softened.
6. Stir in smokey cue seasoning, Worcestershire sauce, diced tomatoes, brown sugar, tomato paste, and beef stock powder. Mix well.
7. Simmer the mixture for about 15-20 minutes, allowing the flavours to come together and the sauce to thicken. Leave on a low simmer until the sweet potatoes are ready.
8. Once the sweet potatoes are fully cooked, remove them from the oven.
9. To serve, cut a slit in each sweet potato and fluff the insides with a fork. Add butter if you desire.
10. Spoon the smokey cue mince generously over each sweet potato. Top with a dollop of sour cream and sprinkle with grated cheese.
