Miso Mushroom & Leek Pasta

This one-pot pasta comes together in minutes, and requires zero prep and minimal cleanup. It builds on the classic combination of pasta, butter and cheese with a spoonful of miso powder for complexity. We have added leek & mushroom, another classic flavour combo just for that little extra veggie intake. Its a 20 minute flavour bomb!!

Ingredients

  • 400g spaghetti or linguine

  • 6 tbsp unsalted butter

  • 1 leek, washed and sliced

  • 250g mushrooms, washed and chopped

  • 3 tbsp chilli miso soup base

  • 100g fresh Parmesan, finely grated (1 packed cup)

  • 1/2 cup breadcrumbs

  • 1 tbsp sesame seeds

  • 1 tbsp sesame oil

  • Extra parmesan to serve

Instructions

  1. In a small fry pan heat the sesame oil and mix through the bread crumbs & sesame seeds, cook until golden and crisp. This can be done before you start cooking anything else if you like.

  2. In a pan heat the butter on medium/high until melted and bubbling. Add chopped leek and cook for 3 mins until starting to soften, add the chopped mushrooms, stir through.

  3. Cook until the mushrooms are soft.

  4. While you are cooking the leeks & mushroom bring a large pot of salted water to a boil. Add the pasta and cook, stirring occasionally, until al dente. Reserve 1½ cups pasta water, then drain the pasta.

  5. Add the chilli miso soup base and 1¼ cups pasta water to the pot of leeks and stir over medium heat until miso breaks down and liquid is uniform.

  6. Add the pasta and Parmesan and cook on low, stirring vigorously with tongs until cheese is melted and sauce emulsifies. You need to keep the pasta and parmesan moving to stop it getting gloopy!!

    Divide among shallow bowls and sprinkle with the sesame bread crumb mixture and extra parmesan.

Hints & tips

Make gluten free - Use gluten free pasta to make this dish GF. Our favourite pasta is San Remo Gluten Free Spaghetti

Tips for this dish - The magic is in the movement once the pasta has been added to the sauce. Moving it with intention helps emulsify the sauce (which means create a smooth silky sauce)

Serving suggestion - Serve this pasta in a big bowl. Its rich intense flavour would suit crunchy greens or frozen peas on the side.

Portion size - Serves 4 or two with leftovers. Leftovers need to be reheated. If you are feeling adventurous trying making the leftovers into a jaffle. Yum!!

Storage - Store in the fridge for 3 days. Not suitable for freezing.
