Sticky Plum Drumsticks

With only 5 ingredients these sticky baked chicken drumsticks are a wonderful quick & easy weeknight dinner. Serve with some boiled rice & veg and slather this sticky sweet & sour plum sauce over the top.

Ingredients

  • 12 chicken drumsticks

  • 3 tbsp soy sauce

  • 1/2 jar plum sauce

  • 2 tbsp honey

  • 1 clove garlic, minced

  • 1 pinch Chilli powder - optional

To serve

  • Sesame seeds

  • Spring onion

  • Lime wedges

Instructions

  1. Place chicken in a bowl. Combine the remaining ingredients and pour over drumsticks to coat.

  2. Cover the dish and leave the chicken drumsticks to marinate for at least 1 hour. You could prep these in the morning and leave in the fridge until later - take them out 1/2 hour before cooking to bring up the temperature.

  3. Pre heat oven to 200c/ 180c fan. Bake for 1 hour, or until drumsticks are cooked, turning & basting with marinade every 15 minutes during cooking.

    Tip: To test if chicken drumsticks are cooked through, insert a sharp knife into chicken, right to the bone. If the juices run clear (not pink-coloured), then the chicken is cooked.

  4. Remove chicken from oven and scrape/brush tray juices onto chicken. This is where all the extra yummy flavour comes from the sticky reduced sauce.

  5. Place on a platter and sprinkle with sesame seeds, sliced spring onion & lime wedges on the side.

Hints & tips

Chicken - Using chicken drumsticks they are on the bone and covered in skin and this is where you gett all the added flavour. They meat stays soft & moist and the skin crispy and delicous.

You could also use skin on/ bone in thighs if that’s what you had on hand. The cooking time would be the same.

Alternatives - If you had pork rashers or pork belly pieces in the freezer these would be a good alternative. The plum flavours marry up well with pork too. Follow the same cooking method but increase the cooking time to 1 hour.

Serving suggestion - Serve with boil rice and broccolini. These would also be great served at your next gathering as finger food.

Portion size - Serves 4 or 2 with leftovers. Perfect leftovers for a quick lunch.

Storage - Store in the fridge for 3 days. Suitable for freezing both before or after cooking.
