Mince Pie Brownies
Enjoy the best of both worlds with these indulgent mince pie brownies, a perfect fusion of classic treats that will be a festive hit.

Ingredients
1 packet of Brownie Mixture
100g butter, melted and cooled
1/4 cup milk
2 eggs
100g chopped dark chocolate
6 mince pies or 9-12 mini mince pies
Icing sugar for dusting
Instructions
1. Preheat the oven to 160c fan and line the base of a shallow 20cm square tin with non-stick baking parchment.
2. Whisk together the eggs, milk, and melted butter. Pour the brownie mixture into a bowl and add the whisked egg mixture, folding until just combined.
3. Add chopped chocolate and broken bits of mince pie, reserving a few pieces for the top. Gently fold through the mixture.
4. Spoon the mixture into the prepared tin and top with the remaining mince pie pieces.
5. Bake in the oven for 25 minutes until the centre is just cooked and set.
6. Remove from the oven and let it cool in the tin. Dust with icing sugar. Cut into quarters and then each quarter into four squares.
