Ingredients
2 tbsp olive oil
1 large onion, diced
2 garlic cloves, finely chopped
2 celery sticks, finely sliced
2 carrots, diced
500g beef mince
2 tbsp Worcestershire sauce
2 tbsp tomato paste
500ml beef stock
A pinch of caster sugar
1 bay leaf
Salt and black pepper to taste
Parmesan & Herb Dumplings:
250g self-raising flour (for gluten-free option, see hints & tips)
125g butter, cubed
1/2 tsp each of salt and pepper
2 tbsp finely chopped fresh parsley
1/3 cup finely grated parmesan cheese
cold water
Instructions
For the mince, heat the olive oil in a large pan and sauté the onion, garlic, celery, and carrots for 15 minutes. Stir occasionally until the vegetables are softened and lightly colored. Add the beef mince and cook for an additional 5 minutes until it starts to brown, breaking up the meat with a spoon as you go.
Stir in the tomato paste, Worcestershire sauce, beef stock, sugar, and bay leaf. Season with salt and black pepper. Bring the mixture to a boil, then reduce the heat and let the mince gently simmer for 20 minutes, stirring occasionally.
Meanwhile, prepare the dumplings. In a bowl, combine the self-raising flour, cubed butter, salt, pepper, parsley, and finely grated parmesan. Rub the butter into the flour mixture until it resembles breadcrumbs.
Create a well in the center of the dry ingredients and gradually add enough cold water (approximately 200ml) to form a soft, spongy dough. Lightly flour your hands and shape the mixture into 12 small balls.
Once the mince has simmered, stir it well and remove the pan from the heat. Place the dumplings on top of the mince, then cover the pan with a tightly fitting lid and return it to medium heat. Cook for 18–20 minutes until the dumplings have risen and are fluffy.
Serve the Mince with Parmesan & Herb Dumplings alongside some green vegetables for a wholesome and comforting meal that will warm your soul. Enjoy!
