Olive oil

120ml orange juice (2 large oranges)

2 tbsp Dijon mustard

2 garlic cloves, minced

2 tbsp honey

1 cup chicken stock

fresh parsley to serve

Instructions

  1. Place chciken legs in a bowl and drizzle with 1 tbsp olive oil. Sprinkle over the Bavarian seasoning and coat the legs evenly with the marinade. Leave to stand for 30 mins or this can be done in the morning and left in the fridge until you are ready, bring out of the fridge 30 mins before cooking to bring up to room temperature.

  2. Preheat the oven to 200c/ 180c fan. Place a skillet or frying pan over medium heat then add the oil into the pan. Arrange the drumsticks in the pan with the meaty skin side down.

  3. Pan fry for 6-7 minutes turning once or twice to brown the chicken all over. Remove from the pan and set a side.

  4. In the meantime, whisk together orange juice, mustard, garlic honey & chicken stock.

  5. Pour the sauce into the hot skillet whisking to combine all the crispy chicken pieces from frying. Bring the pan to a low rolling boil then reduce to a simmer for 2-3 mins.

  6. Add the chicken legs and juices back to the pan and baist each leg with the sauce before placing in the preheated oven.

  7. Cook for 30 mins or until the legs are cooked through basting the chicken 2-3 times to get a crispy flavourful skin.

Serve with some fresh parsley, taste and season.
