Loaded Chilli Garlic Wedges

Ingredients

  • 1.2kg potatoes, skin on and cut into wedges

  • 3 tbsp oil

  • 2 tbsp chilli garlic sauce

  • 1 tsp salt

  • 2 chicken breast, diced into small chunks

  • 2 chorizo sausages, diced into small chunks

  • 2 large tomatoes, finely chopped (or 8-10 cherry tomatoes, diced)

  • 1 avocado, pitted and chopped into chunks

  • 4 spring onion, diced

  • 2 big handfuls of spinach (about 60g)

  • 150g sour cream

  • lime wedges - to serve

  • Fresh coriander - to serve

  • extra chilli garlic sauce - to serve

Instructions

  1. Preheat your oven to 200c/ 180c fan. In a bowl, mix the potato wedges with oil and chili garlic sauce until they're all covered nicely.

  2. Now, spread the wedges in a single layer on a big baking tray. Sprinkle a good pinch of salt over them. Bake for 25 minutes, and after 15 minutes, give the tray a little shake.

  3. After 25 minutes, take the wedges out of the oven and add diced chicken and chorizo on top. Put them back in the oven for another 25 minutes until everything is cooked through and crispy.

  4. While the wedges are cooking, prepare the tomato, avocado, and spring onion.

  5. Once the wedges are done, let them cool for 5 minutes.

  6. Then, add spinach, tomato, avocado, and spring onion on top.

  7. Sprinkle some fresh coriander and pickled jalapenos for extra flavour. Serve with lime wedges, sour cream, and extra chili garlic sauce for dipping. Enjoy your delicious Loaded Chilli Garlic Wedges!

Hints & tips

Potato wedges - Short on time? No worries! Grab some store-bought frozen wedges to the rescue. They work just as great and save you loads of prep and cooking time. Just follow the instructions on the packet, and you're good to go! Quick and delicious!

Spice level - This dish has a mild to medium level of heat, and the creamy avocado and sour cream help to mellow it out.

To control the spiciness, you can use just 1 tablespoon of chili garlic sauce to season the wedges. Alternatively, you have the option to skip it entirely and only use the sauce for dipping at the end.

Easy swaps - Ready for some fun swaps? If you're all about chorizo, ditch the chicken or do it the other way around - your call! If you skip the chorizo, just spice up the chicken with a hint of garlic and paprika.

Now, for a fresh twist, switch out the spinach and bring in shredded iceberg lettuce for that cool crunch!

Added extras - Cheese is always a great addition to these types of dishes. Add your favourite - mozzarella, cheddar, feta, goats cheese any would suit.

And if you want some extra veggie love, toss in diced capsicum and sweet corn. Crunchy and delicious!

Serving suggestion - Serve in the middle of the table for everyone to share. Bulk out the dish by adding black beans with the chicken and chorizo or topping with fried eggs (1 per person) at the end. Extra salad is always great on the side too.

Portion size - Serves 4 or 2 with leftovers. This dish will easily double for larger crowds.

Storage - Store in the fridge for 3 days. Not suitable for freezing.
