Baked Pork Chops
With Diane Mushroom Gravy

Ingredients
4 pork chops (bone in or boneless)
Olive oil
150g mushrooms, sliced
2 tbsp butter
2 cups beef stock
1 tbsp corn flour
1 tbsp Worcestershire sauce
Salt & pepper
Fresh thyme
Instructions
Preheat oven to 200c /180c fan.
Take 4 pork chops (with or without bones) and pat them dry with a paper towel. Sprinkle salt and pepper generously on both sides of the chops.
Grab a large skillet or fry pan and heat 1 tbsp of olive oil over medium-high heat. Add the seasoned pork chops and cook for about 5 minutes on each side. If your chops are boneless, it may take slightly less time. Once done, remove the pork chops from the pan and set them aside.
Without cleaning the pan, add the sliced mushrooms and 2 tbsp of butter. Cook them until they become tender and get some colour.
Pour the Diane sauce into the pan with the mushrooms and mix everything together. Let it simmer for about a minute.
Add 1 cup of stock to the pan and continue to simmer for an additional 2 minutes. Then, mix the other cup of stock with the cornflour and add to the pan. Also, pour in the Worcestershire sauce. Simmer the mixture until the sauce thickens to your liking. Taste the gravy and season it as needed.
Turn off the heat. Take a baking dish and place the pork chops in it. Pour the mushroom gravy over the pork chops. Sprinkle some fresh thyme on top.
Place the baking dish in the preheated oven and bake for 25 minutes or until cooked to your liking.
Serve the delicious pork chops with Diane mushroom gravy alongside mashed potatoes and vegetables.

Pork chops - In this recipe, we use pork chops, which work well with the rich combination of mushrooms and Diane sauce. However, if you prefer, you can also use chicken thighs as a tasty alternative to the lean pork chops. Both options will be delicious and satisfying!
Diane sauce - The Diane sauce adds wonderful flavour to the gravy and makes this recipe perfect for a quick and delicious weeknight dinner. If you prefer a stronger taste, feel free to add extra Diane sauce to suit your liking.
