Huevos a la Mexicana
Mexican scrambled eggs - the best way to include a little spark at the start of your day, but the best way to end it too. Serve these scrabbled eggs over toast with crispy bacon, in a tortilla with spinach or make it a quick supper with grilled chicken. Either way these eggs will add some Mexican spice to your meal!

Ingredients
4 Large eggs, beaten
1/2 Red capsicum, diced
2 Spring onion, diced
1 Jalapeno (or 1 tbsp pickled), deseeded & chopped
1 Tbsp sour cream
1 Cup crushed plain corn chips + more for sprinkling
1/2 Tsp Smoked Chilli Salt
Method
In a heavy based frying pan heat 1 tbsp olive oil. Add Capsicum, spring onion & jalapeno and cook through until just starting to soften.
Beat the eggs together with the sour cream then add to the frying pan, move everything around to scramble the the egg mixture.
Once the eggs are starting to set put the crushed corn chips in and take the pan off the heat. Seaon with the smoked chilli salt & continue stirring and combining the corn chips until the eggs are to your liking.
Serve with extra crushed corn chips and a sprinkle of coriander.
