Honey Baked Brie

Toasted baguette, roasted cherry tomato, sweet red onion and fresh basil combined with garlic smoked honey baked brie, total heaven! The best part is that it is so simple to throw together with mouthwatering results! Serve at your next gathering or for a fuse free Friday night dinner with your favourite drinks.

Ingredients

  • 200g brie wheel

  • 300g baguette - see hints & tips

  • 2 tbsp olive oil

  • 2 tbsp smoked honey

  • 1 garlic clove, minced

  • a pinch of chilli flakes - optional

  • 250g (1 punnet) cherry tomato

  • 1/2 red onion, diced

  • fresh basil

Instructions

  1. Preheat oven to 200c/ 180c fan. Line a baking tray and place the brie wheel in the centre.

  2. Score the top with a knife, being careful to only slice the rind. Deep cuts will cause the melted brie to leak. Cut in a criss-cross pattern.

  3. In a small bowl combine olive oil, honey & garlic. Top the scored brie with the mixture and a pinch of chilli flakes.

  4. Slice up your baguette and arrange around the brie and drizzle with olive oil. Scatter the chopped onion & cherry tomato before seasoning everything generously with salt.

  5. Bake for 10-15 mins until the brie is gooey and soft, the tomato roasted and the baguette crunchy.

  6. Roughly chop the basil and scatter over everything, drizzle the hot baguette with extra honey. Serve immediately.

Hints & tips

Make gluten free - Use gluten free bread to make this recipe suitable for your needs. This GF bread crusty bread mix gives great results and toasts up nicely.

Baguette - To get that freshly baked baguette taste use the bake at home packets. Bake a couple of hours before making this recipe - this will make slicing easier.

Storage - I doubt there will be any of this left! No need for storage instrution’s!!!
