Apple, Pumpkin & Pork Meatball Traybake

Combine juicy, sweet apples & pumpkin with garlicky, Greek style and pork meatballs for a delicious tray bake the whole family will love. Make the meatball mixture ahead of time for an even easier weeknight dinner! Drizzle with the punchy sour cream sauce and enjoy!

  • 500g Pork Mince

  • 1.5 tbsp Cumin

  • 4 garlic cloves, minced - one garlic clove kept separate

  • 3 tsp dried oregano

  • 1/2 cup breadcrumbs - see hints & tips for gf

  • 1 egg, lightly whisked

  • 1/4 cup fresh parsley, chopped

  • 2 red apples, thickly sliced

  • 2 small medium sweet potatoes, sliced

  • 600g pumpkin, seeded, cut into slim wedges

  • 1 cup sour cream

  • 2 tbsp apple & mint jelly

  • 1 tsp sumac - to serve

  • Fresh parsley and mint to serve - optional

Instructions

  1. Preheat oven to 220c/ 200c. Line a large baking tray with baking paper.

  2. Combine the mince, cumin, 3 garlic cloves, oregano, breadcrumbs, fresh parsley and egg in a bowl. Season with salt & pepper.

  3. Roll the mince mixture into 18 even-sized balls.

  4. Place the apple, sweet potato and pumpkin on the prepared tray. Top with the meatballs and drizzle with olive oil. Season.

  5. Bake for 35 mins or until meatballs are cooked through and apple and vegetables are tender.

  6. While the meatballs are cooking mix together sour cream, 1 garlic clove and the apple and mint jelly. Add some chopped mint for a pop of colour. Season and combine. Place in the fridge until everything is cooked.

  7. Sprinkle with parsley, mint & sumac. Drizzle with the sour cream and serve.

Hints & tips

To make gluten free - Use gluten free bread crumbs to make this recipe gluten free. Our favourite crumbs Woolworths & Kook a Krumb

Easy swaps - Pork mince is used in this recipe. Lamb, chicken or beef mince would work just as well.

Sour cream - The garlic adds a lot of punch to the drizzling sauce. Use less garlic if you want a milder taste.

Serving suggestion - Serve with crunchy greens OR a simple crisp iceberg lettuce salad. If you want to bulk it out more, a side of cous cous or brown rice would work well.

Portion size - Serves 4 or 2 with leftovers. Will double easily.

Storage - Store in the fridge for 3 days. Suitable for freezing. Meatballs can be prepared in advance and frozen raw, pull out of the freezer for a quick meal prep!
