Easy Citrus Pepper Chicken

Easy citrus pepper chicken is savoury, tart, and peppery, and has a delicious creamy pan sauce that you’ll want to spoon over your entire plate! This one is so quick and flavourful, it will be on the table fast & a hit with all the family.

Ingredients

  • 2 large chicken breasts

  • 2 tbsp citrus pepper seasoning

  • olive oil

  • 1red onion, diced finely

  • 1 clove garlic, minced

  • 1/2 cup chicken stock

  • 1 tbsp butter

  • 1/2 lemon, juiced

  • 1 tbsp chopped fresh parsley

  • 1/2 cup thickened cream

  • freshly cracked black pepper

Instructions

  1. Use a sharp knife to carefully fillet the chicken breasts into two thinner pieces width ways and flatten down with a rolling pin.

  2. Sprinkle 1 tbsp of citrus pepper seasoning over chicken breast pieces on both sides and rub it in until the chicken is fully coated.

  3. Heat 2 tbsp olive oil in a large skillet over medium. When the skillet and oil are hot, add the chicken and cook on each side until golden brown (about 5 minutes per side). Remove the cooked chicken to a clean plate and cover to keep warm.

  4. Add the diced red onion and sauté for 3-4 minutes until it is softening.

  5. Add the butter, minced garlic & 1 tbsp of citrus pepper to the skillet and sauté for another minute or two.

  6. Add the chicken stock to the skillet and whisk to dissolve all the browned bits from the bottom of the skillet. Add the lemon juice and allow the sauce to simmer for 3-5 minutes, or until it has reduced slightly. Then add the cream & chicken with its juices back to the pan.

  7. Allow the chicken to heat through on a low simmer for 4-5 mins. Season with a little salt, freshly cracked pepper and fresh chopped parsley.

Hints & tips

Chicken - This quick cooking method requires thin chicken pieces that cook quickly, like chicken breasts (cut into thinner pieces). Chicken tenders, thin-cut chicken breast, or chicken thighs would also be suitable.

This method is not suitable for bone-in chicken.

Easy swaps - I have suggested red onion for its sweeter flavour but feel free to use any onion you have on hand.

Sour cream would be a easy swap for cream.

Serving suggestion - Enjoy this chicken dish with mash or boiled rice. Both will soak up the delicious sauce well. Another great option would be to cook pasta and toss the sauce through to serve along side the chicken. Fresh greens are well suited either way.

Portion size - Serves 4 or 2 with leftovers.

Storage - Store in the fridge for 3 days. Suitable for freezing.
