Chocolate Marshmallow Cookies

  1. Combine muffin mix, oil, and eggs in a mixing bowl. Add a splash of milk if the mixture is too dry.

  2. Using a spoon or your hand, form golf ball-sized balls of cookie dough and push a marshmallow into the centre of each ball. Make sure you encase the marshmallow completely. Transfer to a lined baking tray.

  3. Bake at 180c for 10-12 minutes.

  4. Leave to cool for 5 mins before tucking in.

Hints & tips

Gluten free - The muffin mix is already gluten free. Make sure you buy GF marshmallows if you are wanting to keep it gluten free.

Alternatives - Sprinkle peanuts on the top before baking to create a rocky road style cookie

Serving - Give this cookies 10 seconds in the microwave to warm the centre up before eating.

Storage - These cookies will keep in the fridge for up to 5 days - if they last that long!!
