The Homestead Pantry Box Burger
Try our homemade burger recipe with Khancoban Kitchen burger mix, tangy feta & pickled red onion. These simple ingredients jazz up the traditional grilled burger & are perfect for gatherings and quick dinners. A burger should always be jam-packed and juicy - and this one is no different.

Ingredients
1kg beef mince
200g Greek feta, crumbled
1/4 cup of bread crumbs
50g of Khancoban burger mix
1 tbsp tomato paste
1 egg
1 tsp salt
Pickled onions
1 large red onion
1/2 cider vinegar
1 tbsp sugar
1+1/2 tsp salt
Burger toppings
6 burger buns
Fresh spinach
Sauce of choice - Aioli/mayo/tomato/bbq/mustard (we love aioli…)
Method
Start with the red onions. Whisk together the vinegar, sugar & salt with 1 cup of water until the everything has dissolved. Slice the onions finely and place them in the mixture. Let them sit at room temperature for at least one hour.
Mix the mince with all the other burger ingredients and make sure it is well incorporated before shaping into your patties. A good tip is to wet your hands before shaping, roll each piece into a ball, then flatten roughly 2cm wider than your buns.
Place on a oiled plate and chill in the fridge until you are ready to cook.
Now I like to cook my burgers in a non-stick pan. So, place the pan on a high heat and add 2 tbsp oil until smoking, add the patties and cook for two minutes without touching them - do not press! Flip them over carefully and cook for another two minutes. Turn you pan off and cover while you get your other ingredients ready.
Toast the burger buns on the cut sides, put the spinach on first, add the burger and top with the pickled onions. Put a big dollop of your sauce of choice on the bun lid and and place on top.
Now there is nothing left to do but tuck in!
Hints & Tips:
This quick recipe can be easily made in advance, in fact the pickled onions will last 2 weeks in the fridge. So why not try doubling the recipe and using them on your tacos or salads.
Make a freezer stash - once you have shaped your patties wrap them up and pop in the freezer when you are looking for a quick dinner.
Try using a mixture of pork and beef mince for something different.
