Coconut Satay Soba Noodle Slaw

This simple cold noodle salad is moorish, creamy, crunchy and refreshing, and the colours make it visually stunning.
This salad is great as a side, but you can always add your favourite protein and make it a meal.

Time: 30mins

Ingredients:

  • 1 packet BiGG coconut satay

  • 360g Soba noodles

  • 1/4 red cabbage

  • 3 carrots

  • 3-4 spring onions

  • 1 red capsicum

  • 1 yellow capsicum

  • Kewpie Roasted sesame Dressing (see notes)

  • 1 bunch coriander (optional)

Method:
1. Bring a pot of lightly seasoned water to the boil and cook soba noodles for 4 minutes, drain and allow to cool in the fridge.
2. Peel and slice carrots, capsicum, cabbage, and spring onion as fine as possible and set aside.

3. In a large mixing bowl, combine the sliced vegetables and noodles with a sprinkle of BiGG Coconut Satay Seasoning, and a generous drizzle of the sesame dressing.
4. Plate up the salad and top with additional BiGG Coconut Satay & coriander if using.

Hints & Tips:

Kewpie roasted sesame dressing is available in most supermarkets and is a delicious creamy dressing.

However, to spice things up you could slice up some fresh mango & and throw in a handful of mint. Then dress your salad with the Random Harvest spicy mango dressing.
