Roasted Broccoli with Lemon and Parmesan

This easy roasted broccoli recipe is a great side dish for meat or fish and can be served along side cooked pasta or rice. It's ready in 35 minutes, making it ideal for weeknight cooking.

Ingredients

  • 1 large head of broccoli, cut into 1 1/2-inch florets,

  • 2 tbsp olive oil

  • 2 tsp fresh lemon juice

  • 1.5 tbsp citrus pepper seasoning

  • 3 tbsp grated parmesan

  • salt

Instructions

  1. Preheat the oven 220c/ 200c fan. On a large baking tray, toss the broccoli florets and stems with 2 tablespoons of the olive oil and season with citrus pepper seasoning and a little salt.

  2. Top with the grated parmesan & roast the broccoli in the oven for about 30 minutes, until browned and tender.

  3. Remove from the oven and sprinkle with the fresh lemon juice before serving.
