Thai BBQ Chicken Thighs
Enjoy the taste of grilled boneless, skinless chicken thighs, marinated in a mixture of coconut, lime, garlic, and coriander. Cooked on medium/low heat, these tender thighs are topped with salted peanuts for a satisfying crunch. Serve with lime wedges to add extra zing to the vibrant Thai flavours. An easy and flavorful barbecue option!

Ingredients
1 kg chicken thighs, skinless & boneless
2 garlic cloves, minced
1 bunch coriander, chopped including the stalks
2/3 cup salted peanuts, chopped
Lime wedges to serve
Instructions
In a large bowl, combine the coconut, lime & coriander marinade with minced garlic and 3/4 of the chopped coriander, including the stalks. Mix well.
Add the chicken thighs to the bowl, ensuring each piece is thoroughly coated. Cover and refrigerate for at least 1 hour or overnight.
Preheat your BBQ to medium/low heat. This allows the chicken to cook thoroughly on a medium/low heat on the BBQ while retaining its colour and avoiding burning of the marinade.
Take the marinated chicken out, let it come to room temperature for about 15 minutes.
Place chicken thighs on the preheated BBQ. Reserve leftover marinade for basting during cooking.
Cook the chicken thighs for 20-25 minutes, turning occasionally. Baste with leftover marinade during the last 10 minutes.
The juices should run clear when its done.
Remove from BBQ, garnish with chopped salted peanuts, reserved fresh coriander leaves, and serve with lime wedges.

Hints & tips
Chicken - Chicken thighs are generally more forgiving during cooking and are less likely to dry out than chicken breasts. They remain moist and tender, even when exposed to higher temperatures. For this reason I suggest sticking to thighs.
Peanut Alternatives - If peanuts are a concern, try using toasted sesame seeds or crushed cashews for a different nutty flavor and texture.
Serving suggestion - Accompany the Thai BBQ Chicken with rice, a crisp salad, or grilled vegetables to create a well-rounded and satisfying meal. Alternatively, use the thighs to create Thai inspired chicken burgers/ wraps for a casual dinner idea.
Double the batch - Scale up the recipe for a larger gathering or to have delicious leftovers for the next day's lunch or dinner.
Storage - Store in the fridge for 3 days. Thighs are suitable for freezing raw or cooked.
