Teriyaki Beef Burger

Not traditionally a Japanese teriyaki dish but the flavours work so well. Cooking and flipping the beef patties in the teriyaki sauce creates a rich, delicious silky coating. Simply pair with a Japanese mayo slaw for a fun weeknight dinner.

Ingredients

  • 500g Beef mince

  • 1 tbsp tomato paste

  • 1 tbsp fish sauce

  • 1 large garlic clove

  • 1 tbsp grated ginger or paste

  • 2-3 spring onions, chopped finely

  • 1 egg

  • 2 cups finely shredded green cabbage

  • 4 tbsp kewpie mayo - see note for homemade version

  • 1/2 cup Shiso teriyaki sauce - jimoto

  • 4 burger buns

Instructions

  1. In a bowl mix together the mince, tomato paste, fish sauce, garlic, ginger, spring onion & egg. Then separate into 4 balls and shape into patties. Refrigerate for 30 mins or until you are ready to cook.

  2. Meanwhile, shred your cabbage finely and place in a bowl. Add Kewpie mayo and mix to combine. See hints & tips for homemade version.

  3. Heat a fry pan on a medium heat, add teriyaki sauce and bring to a boil. Add the 4 beef patties to the hot pan.

  4. Cook on one side for 4 mins before gently flipping and cooking for another 4 mins, letting the sauce soak into the meat. Baste the patties as you cook them.

  5. Cook for a further 6 mins flipping the patties every couple of minutes. The sauce will of reduced and thickened coating the patties.

  6. Slice the burger buns in half and toast under the grill. Divide half of cabbage over bottom buns. Top with cooked burgers. Top with remaining cabbage, close buns, and serve.

Hints & tips

Gluten free option - Make these burgers gluten free. Use gluten free burger buns or try using lettuce cups as a lightler alternative. My favourite gluten free rolls are Helgas or Genius

Mince - Beef mince is used in this recipe. Try using pork or chicken mince as an alternative if you prefer.

Cabbage - Use whatever cabbage you have on hand. Add a splash of colour with some grated carrot.

Kewpie mayo - No kewpie mayo? Mix 1 cup of regular mayo with 2 tbsp rice wine vinegar, 1 tbsp caster sugar and a splash of sesame oil to taste. Its not exactly the same but its a good substitution.

Serving suggestion - Friday night beers and this teriyaki burger is pretty perfect. If you need a little something else, sweet potato fries are a good side dish.

Portion size - Serves 4 or two with leftovers. Can easily double the recipe.

Storage - Uncooked beef patties can be stored in the fridge covered for 3 days. You can freeze the uncooked patties.

Once cooked store the patties and slaw separately. Reheat cooked patties in the microwave or oven.
