Sweet Chilli & Lemongrass Pork

Whip up a bowl of sweet - salty pork mince with steaming rice and greens for a moreish speedy week night dinner.

Ingredients

  • 500g Pork mince

  • 1 Onion, finely diced

  • 3 Garlic cloves, minced

  • 1 Tbsp fish sauce

  • 3-4 Tbsp Lord & Lion sweet chilli sauce

  • 2 Tbsp Brown sugar

  • 3 Tbsp Soy sauce

  • 1 Tsp cornflour mixed with 1 tsp water

  • 1 Lime

Method

  1. Heat a large wide based pan/ skillet over a high heat with 2 tbsp of oil (peanut or sesame works well with this recipe). Add the pork mince to the pan and cook for 2-3 minutes.

  2. Add fish sauce, onion & garlic. Cook through for a 5 minutes before adding sweet chilli sauce, brown sugar & soy sauce.

  3. Mix all the pork through the sauce then push to the edge of the pan. Let the sauce stay in the middle of the pan to reduce to a thick sticky consistency.

  4. Mix the pork back through the sauce and add the cornflour mixture and stir through. This will thicken up the sticky sauce and coat the pork nicely.

  5. Squeeze the juice of a lime over the top and stir. Season to your taste.

    Serve over hot steamy rice & greens.

Hints & tips

Meat - Pork mince is used in this recipe but chicken, beef or a mix of beef & pork would also work.

Add a little extra punch to the dish with fresh chilli, extra sweet chilli sauce drizzled over at the end or both!!

Chopped peanuts and fried shallots are a nice addition sprinkled over at the end.
