Ruben inspired Beef Burger

with homemade Russian Dressing

A Reuben is a yummy sandwich with corned beef, Swiss cheese, sauerkraut, pickles, and Russian dressing. This beef burger changes it up by using a juicy beef patty instead of corned beef, making a tasty Reuben-inspired beef burger. Finish it off with a tangy homemade Russian dressing to turn this burger into the ultimate weekend family dinner.

Ingredients

  • 500g beef mince

  • 1/2 cup fine bread crumbs

  • 1 egg

  • 1 tbsp beef stock powder

  • 1 tbsp chimichurri seasoning

  • 1 tbsp tomato paste

  • 1/2 tsp each of salt & pepper

  • 4 burger rolls

  • Sauerkraut

  • Burger pickles

  • 4 slices cheese

  • Spinach

Russian Dressing

  • 1 cup mayonaise

  • 3 tsp horseradish sauce

  • 1/4 cup chilli garlic sauce

  • 1/2 small red onion, finely diced

  • 1 tsp Worcestershire sauce

  • 1/4 tsp paprika

Instructions

  1. Mix the beef mince, bread crumbs, egg, beef stock powder, chimichurri seasoning, tomato paste, salt, and pepper in a bowl. Split the mixture into 4 equal parts and shape them into balls. Flatten them to form 4 burger patties. Put them on a plate and cover for later use. You can prep this ahead for easy cooking later.

  2. In a smaller bowl, combine the Russian dressing ingredients, cover, and refrigerate for later.

  3. Now, it's time to cook! Preheat the oven to 200c/180c fan. Place the beef patties on a baking tray and lightly spray them with cooking oil. Bake for 10 minutes until they're nicely colored and juicy. Take them out and add a generous spoonful of sauerkraut on top, followed by burger pickles and a cheese slice for each patty.

  4. Return them to the oven and cook until the cheese is melted and bubbly, around 5 minutes.

  5. Slice open the bread rolls, place a handful of spinach on the bottom, then add a beef patty and a good dollop of Russian dressing.

  6. Put the top part of the bread roll on and dig in! Enjoy!

Hints & tips

Make gluten free - For a gluten-free version, choose your favourite gluten-free bread crumbs & bread roll. Alternatively, for a different approach, skip the bread roll entirely and enjoy a deconstructed version alongside a side of fries.

A quick tip: If you're preparing this for someone following a gluten-free diet, ensure that sauces like Worcestershire and horseradish are also gluten-free.

Russian dressing - The recipe for this Russian dressing is not just plentiful for this dish; having leftovers is absolutely essential! You can use it on a variety of sandwiches, wraps, with hot chips for dipping, or simply save it for the next burger-making session. Keep it stored in a glass jar or airtight container in the fridge for up to 2 weeks.

If you prefer a milder sauce, feel free to adjust the amount of chili garlic sauce to suit your desired level of heat.

Easy alternatives - If you don't have Swiss cheese available, feel free to substitute it with any cheese of your choice. It will still taste equally delicious!

If you're out of spinach, you can easily switch it out for any type of lettuce leaf you happen to have in your fridge.

Serving suggestion - Burger and fries. Need I say more? Pair it with your preferred style of fries and make sure to have extra Russian dressing for dipping.

For a lighter twist, skip the bread roll and savour a deconstructed burger alongside your fries.
