Nasi Goreng Traybake

Turn your favourite Nasi Goreng into an easy tray bake: cook pork, rice, and nasi goreng paste together. Top it with cooked eggs, spring onions, cucumber, and peanuts for a quick and tasty family dinner.

Ingredients

  • 2 tbsp oil

  • 500g pork mince

  • 1 brown onion, halved lengthways, thinly sliced

  • 2 garlic cloves, minced

  • 3 tbsp nasi goreng paste

  • 2 tbsp soy sauce

  • 2 cups long-grain rice

  • 4 cups (1L) chicken stock

  • 4 eggs

  • 2 spring onions, thinly sliced

  • 1 large Lebanese cucumber, thinly sliced diagonally

  • 250g cherry tomatoes, halved

  • 2 tbsp roasted peanuts, roughly chopped

  • Crispy shallots (optional)

  • Coriander sprigs, to serve

Instructions

  1. Preheat the oven to 200c/ 180c fan. Heat oil in a large oven-proof skillet/pan over medium heat. Add pork mince and cook for 10 minutes or until well-browned.

  2. Add onion and garlic, and cook for 3 minutes or until softened.

  3. Add the Nasi Goreng Paste, stir until fragrant.

  4. Add the rice and stir until well combined. Pour in the stock & soy sauce, bring to a boil.

  5. Remove from heat and place in the oven with a lid on. Bake for 20 minutes.

  6. Remove from the oven and make 4 indentations into the rice. Break an egg into each indentation.

  7. Place the lid back on and bake for an additional 8-10 minutes or until the egg whites are just cooked. Tip -Check at 8 minutes and cook for a further 2 minutes if needed.

  8. Top with spring onion, cucumber, tomatoes, peanuts, crispy shallots (if using), and coriander. Serve immediately.

Hits & tips

Eggs - If you don't feel confident enough to cook the eggs as directed, omit step 6 and bake the rice for 25 minutes. Remove from the oven and leave it to stand for 10 minutes with the lid still on. While it's resting, poach 4 eggs separately and serve as per step 8, placing the poached eggs on top.

Easy swaps - Swap the pork mince for chicken mince or even diced chicken thigh or breast for a slightly different flavour and texture in the dish.

Add the heat - If you like a kick of heat, add 1-2 finely chopped small red chillies when serving.

Serving suggestion - Serve this Nasi Goreng tray bake as is or add an extra salad on the side. Any type of lettuce leaf would be fine.

Storage - Store in the fridge for 3-4 days. Leftovers need to be reheated until piping hot. The cooked rice dish can be frozen without the fresh salad.
