Nasi Goreng Chicken Burger

Make this delicious burger using nasi goreng paste. Cook up caramelized nasi goreng-marinated chicken, add fresh crunchy veggies, a crispy spring onion-fried egg, and drizzle with a tasty umami dressing. A simple and fun family dinner idea.

Ingredients

  • 4 burger buns

  • 4 large chicken thighs

  • 3 tbsp nasi goreng paste

  • 1 carrot, peeled into ribbons

  • 1 cucumber, peeled into ribbons

  • 60g spinach

  • 4 eggs

  • 4 spring onions, diced

  • Kewpie mayo

  • Alg Rainbow Sprinkle (optional)

  • Crispy shallots (optional)

  • Oil for frying

  • Salt and pepper

Instructions

1. Preheat the oven to 180c fan. Marinate chicken thighs in nasi goreng paste for at least 30 minutes or do it in the morning for a quick dinner later.

2. Bake marinated chicken on a tray for 25-30 minutes or until cooked through and caramelised.

3. While the chicken is cooking peel carrot and cucumber into ribbons using a vegetable peeler and dice spring onions.

4. Once the chicken is nearly cooked fry eggs in oil over medium heat, sprinkling with diced spring onions while the whites are still cooking so they set in the eggs. Season with salt and pepper.

5. Toast burger buns until golden brown.

6. Spread Kewpie mayo on the bottom half of each bun. Mix with Alg Rainbow Sprinkle for extra flavour if desired.

7. Place spinach, carrot ribbons, and cucumber ribbons on the mayo, then add a cooked chicken thigh.

8. Top with a spring onion-fried egg. Optionally, sprinkle Alg Rainbow Sprinkle and/or crispy shallots for extra flavour.

Hints & tips

Make gluten free - Adapt this for a gluten-free diet by opting for a gluten-free bread roll or skipping the bread altogether to create a naked nasi goreng chicken burger.

Chicken - Chicken thighs work better for this recipe as they don't dry out during cooking. However, if you only have chicken breast on hand, you can use it. Consider splitting the breast in half to decrease the cooking time and prevent the meat from drying out.

Easy swaps - Exchange spinach for your preferred lettuce leaf; rocket could introduce a hint of peppery flavour, or create a quick Asian slaw with cabbage and the carrot for a creamy texture.

Serving suggestion - Enjoy the Nasi Goreng burger as it is or pair it with your preferred fries for a satisfying and flavorful meal.

Storage - Store any leftovers in separate containers in the fridge. The chicken will stay fresh for up to 3 days, and you can also freeze it either before or after cooking.
