Naan-Topped Lamb Rogan Josh Pie

This Indian-inspired lamb pie needs next to no prep. Tear naan bread over your rich Rogan Josh, bake it until crispy then serve with Indian cucumber salad & fresh coriander.

Ingredients

  • 500g Lamb mince

  • 2 Brown onions, diced

  • 1 Can diced tomato

  • 1 Packet Curry Traders Rogan Josh

  • 1 Cup of vegetable stock

  • 2 Cups natural yoghurt

  • 2 Tbsp garlic paste

  • 2 Tbsp ginger paste

  • 2-3 Garlic naan

  • 1 Large cucumber

  • Juice of 1/2 a lemon

  • 1/2 - 1 Tsp cumin powder

  • 1 Tbsp fresh mint, chopped

Method

  1. Preheat the oven to 220c/ 200c fan/ gas 7

  2. Heat a wide-based pan (preferably non-stick) over a medium-high heat with a little olive oil. Once hot, add the diced onion and lamb mince with a pinch of salt. Cook for 5-7 min or until the onion is starting to soften and the mince has browned.

  3. Once the mince and onions have browned, add the Rogan Josh powder, garlic and ginger and cook for 1-2 min or until fragrant. Then add the diced tomato, stock and give everything a good stir. Let it reduce for 5mins before adding the natural yogurt.

  4. Transfer the lamb Rogan Josh to an oven-proof dish & roughly tear the naan bread over the top. Drizzle with olive oil & season with a little rock salt before cooking in the oven for 10mins or until the naan is crispy on top.

  5. While the Rogan Josh is cooking, peel the cucumber & slice in half lengthwise, scoop out seeds. Dice the cucumber and place in a bowl. Whisk together yogurt, lemon juice, cumin and mint.

  6. Pour over cucumbers and toss to coat.

Serve the Rogan Josh pie with a dollop of Indian cucumber salad & fresh chopped coriander.

Hints & tips

Bulk this meal out to serve more people by serving rice on the side - also increase the amount of Indian cucumber salad by doubling recipe.

This Rogan Josh spice kit has a delicious deep warmth about it. If you want a milder favour only use half the amount of spice mix and add 1 tbsp of tomato paste in step 3.

Beef mince will work just as well in this recipe.
