Lemon, Coconut & Raspberry Slice

Nothing beats this classic flavour combo! A super easy baked slice using minimal effort is sure to be a winner for smoko and packed lunches.

Ingredients

  • 325g Lemon & coconut cake mix (1/2 a packet)

  • 175ml Boiling water

  • 60g Melted butter

  • 200g Raspberries (Fresh or frozen)

  • 100g Shredded coconut

Method

  1. Preheat the oven to 180c

  2. Line a 11x7 baking dish with baking paper.

  3. Place the cake mix in a bowl with the boiling water & butter. Mix to combine and let it stand for a few minutes.

  4. Pour into the baking dish and scatter the raspberries over the mixture. Top with the shredded coconut before baking for 30mins.

  5. Check with a skewer the slice is cooked in the middle, give it 5 minutes more if needed.

  6. Cool & refrigerate before slicing.
