Jerk Steak with Zucchini & Corn Salad

This steak is easy, insanely delicious and everyone will love it! Serve along side this summery zucchini and corn salad, its bright and fresh, quick and satisfying. A perfect weekend recipe!

Ingredients

  • 4 sirloin steaks - about 180-200g each

  • 2 tbsp olive oil

  • 1 tbsp brown sugar

  • 1 tsp garlic granules

  • 1 tbsp jerk seasoning - The Spice People

  • 1/2 tsp each of salt & pepper

Salad

  • 2 medium zucchini

  • 2 corn on the cob

  • 100g feta, crumbled

  • 60g rocket

  • A few leaves of fresh torn basil

  • 1/2 cup olive oil

  • 3 tbsp fresh lemon juice

  • 1 tbsp fresh basil chopped

  • 1 tsp Dijon mustard

  • 1 clove garlic , minced

  • Salt & pepper

Instructions

  1. In a bowl mix together olive oil, brown sugar, garlic granules & jerk seasoning.

  2. Pour into a baking dish and add your steak, making sure you cover both sides with the marinade.

  3. Leave to marinade for at least 30 mins covered at room temperature.

  4. In the meantime with a vegetable peeler, peel the zucchini lengthwise into long ribbons discarding the middle. Set a side for later.

  5. Make the vinaigrette for the zucchini salad by whisking together the oilve oil, lemon juice, dijon mustard, garlic & chopped basil. Season with salt and pepper.

  6. Preheat the BBQ to hot. Place your corn on the cob on the BBQ first and cook turning for 10 mins to cook through and charr the kernels.

  7. Add the steak halfway through cooking the corn. See hints & tips for cooking times.

  8. Once cooked, place steak on a plate loosely cover with foil to rest for 5 mins.

  9. While the steak is resting slice the charred corn kernels off the cob. Add the zucchini, rocket, corn and feta to a bowl. Pour over the vinaigrette and toss the salad lightly. Garnish with a little extra basil and crumbled feta.

    Serve steak & salad together.

Hints & tips

Steak cooking times - Cooking times: RARE - 2 mins each side, rest for 2 mins, MED-RARE - 2.5 mins each side, rest for 4 mins, MED - 3 mins each side, rest for 4 mins, MED-WELL - 3.5 mins each side, rest for 4 mins, WELL DONE - 5-6 mins each side, rest for 5 mins.

Steak - Sirloin steak is used in this recipe. Feel free to swap it for steak you prefer. Pork steaks would also be a great alternative.

Serving suggestion - Serve steaks and zucchini salad with potato wedges OR toss 1 cup of cooked brown rice through the zucchini salad.

Portion size - Serves 4. Recipe can easily be halved or doubled.

Storage - Storge in the fridge for 3 days. Not suitable for freezing.
