Indian Spiced Parmesan Potatoes

These crispy, cheesy, Indian spiced potatoes are one to add to your list of easy flavoursome recipes. A dish that goes with just about anything! So, when you want to spice up the mundane give these spiced cheesy potatoes a try.

Ingredients

  • 5oog small potatoes, cut in half

  • 1 tbsp olive oil

  • 1 tsp garlic powder

  • 2 tsp tikka spice - Gourmet Spice Kits

  • 80g parmesan, chopped finely - see pic.

  • Mayonnaise & spring onion to serve

Instructions

  • Pre-heat oven to 200c/ 180c fan. Mix garlic, tikka spice mix and salt together in a small bowl.

  • Chop potatoes in half and mix together with olive oil and half the spice mix in a mixing bowl.

  • Mix parmesan with remaining spice mix and transfer to baking dish, evenly coating the bottom

  • Add spiced potatoes to baking dish, cut side down and season with a little salt and pepper.

  • Cook in oven for 30-40 minutes without touching them. The cheese will cook around the potatoes and stick to them.

  • Remove and allow to cool for 5-7 minutes so the parmesan gets nice and crispy

    Serve with mayonnaise and diced spring onion.

Hints & tips

Potato - The recipe uses smaller potatoes such as baby whites or red skinned potato. You can use larger ones, cut them roughly into the same size pieces - roughly 3cm square.

Parmesan - Using a hard cheese like parmesan stops the cheese from getting too crispy say like cheddar would. I wouldn’t recommend using any other cheese for this recipe.

Serving suggestion - A great dish to serve with a BBQ. Try changing the usual hot chips for these when cooking steak - perfect with a crisp green salad.

Portion size - This recipe would half easily. If you want to try doubling it I would recommend doing it in two dishes to make sure you get the desired crispy, cheesy effect.

Storage - These will keep in the fridge for 3 days. To reheat, cover with foil before putting in the oven.
