Hot Smoked Salmon & Zucchini Pasta
Indulge in this 20-minute creamy pasta dinner! This dish is bursting with flavours and incredibly easy to prepare. With hot smoked salmon to save you time and zucchini adding a pop of colour and nutrition, you'll have a satisfying and delicious meal ready in a flash.

Ingredients
450g spaghetti
1/2 cup pasta water
450g zucchini, grated
2 garlic cloves, minced
2 tbsp butter
1 tbsp chimichurri seasoning
125ml cream
150g hot smoked salmon (1 packet of 2 fillets)
Juice of 1 lemon
Zest of half a lemon
1/2 cup (about 50g) parmesan + extra for sprinkling
Salt & freshly ground pepper
Fresh basil or parsley to serve
Lemon wedges to serve
Instructions
Boil spaghetti in well-salted water until it’s 1 minute shy of fully cooked. Before you drain it, reserve 1/2 cup of the pasta cooking water and set it aside.
Melt butter and olive oil together in a large fry pan over medium-high heat. Add garlic & grated zucchini stirring it into the butter for one minute before adding chimichurri seasoning, salt, and pepper.
Stir zucchini occasionally for 10 to 12 minutes until soft and concentrated. Reduce heat if it starts to brown.
Add cream, lemon juice, and zest. Reduce the heat to medium-low & simmer for a few minutes.
Pour in 1/4 cup reserved pasta water. Add drained pasta and cook together for 2 minutes.
Use tongs to mix zucchini sauce with pasta strands. Add more pasta water as needed.
Add the flaked hot smoked salmon, parmesan and good grind of salt and pepper. Gently toss.
Serve with extra grated parmesan, herbs, and lemon wedges. Enjoy!
Hints & tips
Make gluten free - Make this dish suitable for a gluten free diet by swapping the regular pasta for your favourite GF version. My favourite is San Remo Gluten Free Spaghetti
Pasta - This recipe uses spaghetti, and the grated zucchini sticks nicely to the pasta strands. However, you can use any pasta you have without affecting the taste.
Hot smoked salmon - Adding hot smoked salmon brings a delicious flavour and saves cooking time. If you prefer fresh salmon, cook 2 fillets separately and flake them into the pasta as mentioned in step 7.
Serving suggestion Serve the pasta with extra boiled veg and a side of garlic bread.
Portion size - Serves 4 or 2 with leftovers.
Storage - Store in the fridge for 3 days. This dish is best eaten fresh and not really suitable for freezing.
