Honey Glazed Carrots with Goats Cheese & Hazelnuts

Honey glazed carrots are both easy and inexpensive but really tasty. Roasting the carrots intensifies their flavour and the smoked honey glaze gives them a deliciously sweet flavour with subtle hints of smokiness. Top with goats cheese and hazelnuts to add texture and earthy savoury notes. Serve along side your next roast or simply make your weeknight dinner a little more special.

Ingredients

  • 300g carrots, peeled and sliced lengthways

  • 1.5 tbsp smoked honey

  • 1 tbsp olive oil

  • 100g Goats cheese

  • 25g hazelnuts, toasted in a dry pan and roughly chopped

  • A handful of herbs (chives, parsley and mint work well), roughly chopped

  • Lemon juice, to taste

Instructions

1. Preheat the oven to 220c/ 200c fan. Prepare the carrots. Place in a bowl and drizzle over the honey and the olive oil, then add some freshly ground black pepper. Toss to coat.

2. Spread out on a lined baking tray and roast for 30-35 minutes, until tender.  

3. Put the cooked carrots into a serving bowl, crumble the goats cheese over the top, then scatter with the herbs, hazelnuts and a squeeze of lemon.

Hints & tips

Carrots - This recipe uses only carrots. Feel free to mix it up with a mixture of other veggies such as parsnips or even beetroot.

Easy swaps - Swap the goats cheese for feta if you prefer.

Hazelnut substitutions: Cashews, walnuts or pistachios

Extras - Turn this dish into a salad by tossing through mixed leaf and drizzling over a little olive oil.

Serving suggestion - Great along side BBQ meat or a lamb/ chicken roast. This dish would also be great with these crumbed lamb chops or simply oven baked chicken drumsticks.

Storage - Store in the fridge for 3 days. Not suitable for freezing.
