Flamed Grilled Chicken Tortillas

Did someone say barbecue and Mexican food? Oh yes!! There is no denying this taste sensation of char grilled tortillas filled with juicy chicken and fresh zesty goodness. Tweed Real Food Fiesta Mexicana Seasoning achieves absolute flavour perfection and it is also quick and easy!

Ingredients

  • 500g chicken tenderloins, roughly chopped into bite size cubes

  • 2 Tbsp Tweed Real Food Fiesta Mexicana Seasoning

  • 2 Tsp smokey chilli salt

  • 1 large cucumber, halved lengthways and finely sliced

  • 1 red onion, diced

  • 1 brown onion, diced

  • 2 avocados, stone removed, sliced cross ways, flesh removed

  • 12 small soft tacos, grilled on BBQ to toughen up

  • 2 limes, sliced in segments

  • Bunch fresh coriander, rinsed, dried & roughly chopped

  • Sour cream

Method

  1. Heat BBQ on a medium-high heat.

  2. Cook onion the flat plate side of the BBQ for 4 - 5 minutes to achieve a charred look.

  3. Rub chicken with Mexicana Fiesta Seasoning and cook alongside onions until cooked through, 5 - 7 minutes (dependant on size of pieces). Once cooked season with the smokey chilli salt.

  4. Meanwhile over the open grill, grill soft tortillas on both sides until they are becoming crispy but not hard, so they still fold without tearing.

  5. Fill with chicken, avocado, coriander, cucumber, tomato, onion and dress generously with lime juice and sour cream.

  6. Season lightly with additional Fiesta Mexicana mix and smokey chilli salt.

Hints & tips

Swap the chicken for BBQ steak

If you don’t have a grill on your BBQ but you have a gas hob you can still achieve the same charred effect with your tortillas. With tongs hold your tortillas over the burning flame until charred.
