Creamy Black Garlic Chicken

This creamy Black Garlic Sauce with Chicken is a tasty and comforting weeknight dish. Juicy chicken topped with a flavourful creamy sauce that will have you screaming for more! Black garlic is earthy and a bit sweet. It has a taste somewhat like balsamic vinegar with mild garlic taste.

Ingredients

  • 2-3 Chicken breasts (depending on size), cut into large strips

  • 2 tablespoon olive oil

  • 2 heaped teaspoons of Tumami paste

  • 1.5 cup half and half (half milk half cream)

  • 2 tsp dried oregano

  • 1 cup parmesan cheese, grated

  • 3 cup baby spinach

  • Salt

  • Ground black pepper

Instructions

  1. Slice chicken breast into large strips. Season with salt and pepper.

  2. In a medium cast-iron or nonstick skillet over medium-high heat, warm the olive oil. Add chicken and cook for 12 - 13 minutes, moving the pieces around to brown on all sides. Remove the chicken to a large plate.

  3. In the same skillet, reduce the heat to medium-low heat. Add 3 tablespoons water and scrap the brown bits with a spatula. Add Tumami paste and sauté for 1 minute. Pour in half and half, oregano and 3 more tablespoons of water. Bring to simmer.

  4. Return the chicken to the pan and cook for 4 minutes. Add the cheese and stir until melted.

  5. Add spinach and cook until just wilted. Season with salt & pepper to your own taste.

  6. Transfer chicken and spinach to serving plates. Scoop sauce over the chicken. Serve with rice or mash.

Hints & tips

Serving suggestion - Serve over mash potato OR brown rice with crunchy green veggies.

Chicken - Try using skin on chicken thighs instead. After you put the chicken (skin-side down) in the skillet, do not move them. The skin will stuck to the pan and it's ok. Once the skin is golden brown and crisp, the thigh will be easy to move. Cook for 6-8 minutes to brown the skin then turn to brown the other side. Follow method as above to finish the dish.

Garlic - If you like a stronger garlic taste feel free to add 1 minced white garlic clove at stage 3 in the method.

Oregano - Using fresh oregano? Substitute the dried with 2 tbsp of fresh to get the same flavour.

Portion - This dish can easily halved OR doubled if you wish.

Freezing - This dish is suitable of freezing.
