Chilli Garlic Pork Noodles

Ingredients

  • 500g pork mince

  • 4 spring onions

  • 4 garlic cloves, minced

  • 1 tsp ginger, fresh or paste

  • 200g rice noodles

  • 1 tsp black pepper

  • 2 tsp sesame seeds, toasted

    Sauce

  • 3 tbsp chilli garlic sauce

  • 2 tbsp soy sauce

  • 2 tbsp rice wine vinegar

  • 2 tbsp caster sugar

  • 1 tsp fish sauce

  • 1.5 tbsp beef stock - san elk

  • 2 tbsp water from the cooked noodles

  • Asian greens or broccoli to serve.

Instructions

  1. Thinly slice the spring onions. Keep the white parts separate from the green parts. Finely chop the garlic cloves.

  2. Make the sauce by mixing chilli garlic sauce, soy sauce, rice wine vinegar, sugar, fish sauce, and beef stock in a small bowl.

  3. In a large fry pan, heat 3 tbsp of neutral oil (like peanut or canola) over medium-high heat. Add the white parts of the spring onions, garlic, and ginger. Cook for 1 to 2 minutes until they get some colour.

  4. Add the pork mince and black pepper to taste. Break up the pork and sauté for 1 to 2 minutes until it's no longer pink. Reduce the heat to medium (or low) and pour in the sauce. Stir for 1 to 2 minutes.

  5. Boil a pot of water and cook the noodles according to the package instructions. Once done, drain and set aside.

  6. Add the drained noodles to the pork mince with 2 tbsp of noodle water. Mix until the noodles are well coated. Divide the noodles onto serving plates.

  7. Garnish with the green parts of the spring onions and sprinkle with the toasted sesame seeds on top.

  8. Serve the dish with Asian greens or broccoli and enjoy!

Hints & tips

Mince - Pork mince blends wonderfully with Asian flavours. If you don't have pork mince available, beef or chicken mince would make a great substitute.

Make it less spicy - This dish offers great warmth in its flavours. To make it less spicy, simply leave out the black pepper and use only 1 to 2 tbsp of chilli garlic sauce.

Serving suggestion - Serve the noodles with Asian greens or broccoli. You could also serve the pork mince with boiled rice if you have no noodles to hand.

Portion size - Serves 4 or 2 with leftovers.

Storage - Store in the fridge for 3 days. Pork mince is suitable for freezing but I dont suggest to freeze the noodles as they will turn mushy once defrosted.
