Berbere Sausage Casserole

Berbere spiced sausage casserole. A quick and easy recipe for a week night dinner.

Ingredients

  • 8 Beef sausages

  • 2 Carrots, peeled & chopped into chunks

  • 2 Red onions, cut into wedges

  • 500ml Passata

  • 250ml Beef stock

  • 1.5 Tbsp Berbere mix (make it 2 tbsp if you like it spicy)

  • 1 Garlic clove, minced

  • 1 Tbsp minced ginger

  • Juice & zest of 1 lemon

  • Fresh parsley, for serving

Method

  1. Preheat oven 180c fan/ 200c.

  2. Heat 1 tbsp of olive oil on high in a deep sided oven proof pan (our favourite is a cast iron). Brown sausages for 5 mins before adding garlic, ginger, onion & carrots. Toss and brown the veggies for another 5 mins.

  3. Meanwhile mix passata, berbere seasoning & beef stock together and add to the pan.

  4. Give everything a good stir around, season and bring to a boil before transferring to the oven for 30-35mins.

  5. Before serving add lemon juice & zest and mix through. Top with chopped fresh parsley before serving.

Hints & tips

Sausages - Pork or Lamb sausages could also be used in this dish.

Berbere seasoning - This seasoning is warm & peppery. If you don’t like too much heat only use 1 tbsp when cooking this dish or serve natural yogurt along side it.

Serving suggestion - Lemon & parsley cous cous. Cooked cous cous per packet instructions, add zest & juice of 1 lemon & mix chopped parsley through. Season before serving.
